A honey blend with a signature.
Unlike European and Africanized bees (Apis), stingless bees store their honey in pots. This product has a signature and expresses characteristics of the region, such as the soil, climate, and flowers these insects visit. All of this together, like wines and cheeses, creates the terroir, that is, the unique expression of the region in which the bee is produced.
It was produced. Each variety of native bee also produces honey with a distinct flavor. While the jataí bee, for example, produces a sweet and delicate honey, the gray and yellow uruçu bees deliver a sweet product with almond tones and an acidic body.
Researchers at Embrapa explain that bees collect nectar from their preferred flowers, process the sugars with their own enzymes and with the help of fermentation by beneficial microorganisms. They store it in the hives in pots made from resins of plants from the region. "The type of resin, the storage time, and other characteristics, such as the climate, for example, are capable of imparting different blends of floral, acidic, woody flavors, almond notes, or sweetness to these honeys."
